Ingredients
1 kg Uncooked Rice
 100 g Peas
1 of each colour Mixed Peppers
100 g Red Onion
100 g Cooking Oil
90 g Spiceman’s® Savoury Rice Spice
2000 mL Water
20 g Salt
4 Chicken Fillet
80 mL Saucalitos® Portuguese Peri-Peri Mild
100 mL Saucalitos® Portuguese Peri-Peri Mild or Hot
Preparation
Cook rice with water and salt over medium heat. Once cooked, drain excess water and leave aside.
Cook mixed peppers, onion and peas in oil (5-7 minutes), then add the Spiceman’s® Rice Spice and cook for a further 30 seconds to a minute.
Mix the spice mix with the rice until evenly coated.
Grill the chicken on a grill and baste with the Saucalitos® Peri-Peri Mild until the breasts are cooked (5-7 minutes). Cut the breasts into strips and mix with the rice. Then drizzle the mild/hot sauce over the top of the rice.
Serve.
